New company Englyst Carbohydrates is carrying out pioneering research on our food at Southampton Science Park.
Co-founder Dr Klaus Englyst (pictured
right) who has recently completed a PhD at Cambridge, leads a team of four
who are developing a nutritional classification for dietary carbohydrates.
This work follows on from more than 20 years of scientific studies on
identifying the detailed composition of the carbohydrates we eat. One of
their present interests is in finding out how food-processing affects the
nutritional quality of carbohydrates.
The work at Englyst Carbohydrates has
applications for both scientific research and for food labelling. The aim
is to benefit public health by working on projects in partnership with
academic and industrial organisations.
Said Dr Englyst: "Southampton Science Park was clearly the best site because of its connections with the
University of Southampton, where we have some close links. We also found
that the Science Park understood and accommodated our specific needs when
setting up our laboratory. We've been here six months and have already
made further advances in our research into the interaction between dietary
carbohydrates and health."
